How can i not feel hungry all the time..

OMG I have to share this, I feel this a lot lately, hungry all the time???
So I wanted to get things straight, is this because I started walking a lot lately, makes me feel good about myself but then this..hunger attacks..don't know.

My baby.

I cannot believe my little baby will be three already!!
Already missing his baby smell. His hair curls..all grown up now. When  they start talking back you just want to curl up and cry..baby slow down  i will miss everything out.
Now he started writing letters and would tell me what goes where. I am not ready yet, i still call him baby at times but he does not like it, he  wants me to count me as a grown up, he got his own choices there! well happy birthday me dear baby..no matter how much you grow, you are still my darling little baby.

Spinach Waffle

MMMM....
Because I am tasting it right now..
Do not resist yourself...give it a try.
Recently my hubby got me a waffle maker...just love it not because i can make waffle but i can skip frying all together and still enjoy my flavors...

Ingredients:
to make one waffle :
1/2 cup of waffle mix
2 table spoon of pureed mixture of spinach, green chilies and ginger & garlic
( my total puree was 2 cups of fresh spinach,  2 green chilies , 3 cloves of garlic and a half inch piece of ginger , but for each waffle just two table spoon mixture is enough for flavor and color)
1 and 1/2 teaspoon oil
1 table spoon water

Method:
Preheat your waffle iron .
Brush your iron with butter , pour your batter . Let the waffle iron do the magic and you have the best crunchy appetizer for your family on the table.

Serve it with cool cucumber chutney or sweet tamarind chutney.

picture is not the whole waffle because , just before i could take the pic..my daughter who tastes it loved it so much that i only have half a waffle to take pic of!!

Super plans for the big game

Hi all,
Lately it has been so busy that I have not been able to squeeze time for my blog..sad though but will keep up.
Big game coming up this weekend and some of you may be planning for something special that evening.
Well you can easily entertain a large or a small group of friends if you plan well ahead.
It's not too late to start planning if you are still up for entertaining.

Start with the list for the friends that are coming over, look for allergies if any kids are coming.
Make list for what is it that you want on the menu, a go to food , an excotic menu and so on..

Possible ideas:


  1. make ahead pizza dough and make your own pizza with assorted toppings and cut in to bite size pieces and serve with your favorite dipping sauce.
  2. use the store bought tortilla (prefer flavored ones like sun dried tomatoes or spinach ) make a quick wrap with roasted veggies and a dollop of hummus and a hint of hot sauce.
  3. cheese platter is always a hit.
  4. try indian food: make samosas ( puff pastries filled with spicy potato and peas filling ) and serve with cilantro chutney and mango chutney.
  5. Also I like Mediterranean menu, very exotic, the fabulous feta cheese with olives, baba-ganoush..mmm...yumm and slightly roasted pita chips for the dip/ accompaniments.
  6. Make small cute shot glasses of Mango Lassi ( sweet accompaniment with a spicy food), cold cucumber soup, chilli ( all time favorite).
     7.make a quick jalapeno poppers : mix 1 measure of cream cheese to 1 measure of sour cream, add green onions about a handful, salt and pepper, teaspoon of cayenne pepper for that extra kick. In the mean time in a separate bowl mix 1 cup of all purpose flour with some salt and pepper and just enough water to make it a paste for coating. In the third bowl you can use the bread crumbs, left over rice crispies crushed or the panko breading. Slit your Jalapeno chili in the center, stuff with the cheese mixture and roll it first in the flour base and then roll it in your bread crumbs bowl. Preheat your oven to 375 degrees. Now place your poppers on a oven baking dish, spray with non stick oil and bake until golden brown. You will love this lighter version instead of frying.
     8. Chips and dips are always a hit. You can substitute kale with your regular potato chips ( prehear oven, wahs and dry your kale leaves, sprinkle salt and pepper and olive oil, bake until crispy for about 10 minutes. Yum..o

Home made Focacia Bread

Hello all,
Come weather changes we all crave for hot /warm soups but think about the accompaniments.. nice loaf of bread works out best.

Here's to all those soups out there..

Ingredients:
5 cups all purpose flour, plus a little more for kneading
1 tablespoon sugar
1 package active dry yeast
1 3/4 th cup warm water
1 cup olive oil
1 tablespoon salt

Method:
Combine yeast, sugar and warm water in a bowl. Put the warm water bowl aside for 15 minutes.
In a bowl combine the flour, salt 1/2 cup olive oil and yeast mixture. Mix the dough. Once the dough comes to a form soft dough transfer the dough to a lightly floured bowl  knead gently for 2 minutes and cover it  with a plastic wrap and put it in a warm place for 1 hour ( minimum) until the dough doubles in size.
Preheat the oven to 375 degrees. Coat your flat oven proof sheet with olive oil  and transfer the dough to the pan and flatten it using your fingers..( let kids do it makes them feel the part of helping you cook the meal)
Drizzle your left over olive oil on it sprinkle some salt on it  ( at this point you can sprinkle finely chopped garlic or herbs on it )
Cook it in your oven for 25 - 30 minutes( on your center rack), or until the top is golden brown.
Enjoy your bread.
